♥RHUBARB SALAD♥
Cook in a medium pan for about 15 minutes:
3 cups finely chopped rhubarb
1/2 c sugar
1/3 cup water
1/4 tsp salt
Then add:
2 pkgs strawberry gelatin (3 oz)
1 c chopped celery
2 1/4 c water
1/2 c chopped nuts (I used almonds – pecans would be good)
1 tbsp lemon juice (optional)
Chill until set. Enjoy!
