★ Decadent Chocolate Crepes ★ Splurge Alert!!
This delicate crepe is also very versatile; as shown it’s a dessert, with surprise layers inside. But with a change of filling the same crepe can be a breakfast item or dinner for that matter!
How to make… The measurements I am including are for a serving size of 6 crepes:
3/4 cups milk
2 tablespoons vanilla extract
3/4 cup all-purpose flour
1 tablespoons brown sugar
1/4 teaspoon salt
3 tablespoons melted butter
2 tablespoons softened cream cheese
1tablespoon of brown sugar
1/4 teaspoon of vanilla
2 tablespoons of sour cream
chocolate whip cream
1 – 2 tablespoons of chocolate syrup
1/4 cup semi-sweet chocolate chips
In a large bowl, mix together the milk, egg yolks and vanilla. Stir in the flour, sugar, salt and melted butter until well blended.
In a separate small bowl stir together the ingredients for the spread and set aside… don’t stir too much you don’t want the mixture to get too warm and thin.
Heat a small non-stick pan over medium heat until hot. Coat with cooking spray or other oil. Pour 1/4 cup of batter into the pan and tip around to spread the batter to the edges and so it remains as thin & even as possible. When bubbles form on the top and the edges are dry, flip over and cook until lightly browned on the other side and edges are golden brown. Repeat with remaining batter.
Take your crepe and spread the cream cheese mixture over the entire crepe (just a thin layer) then down the center a nice full line of whip cream, and roll together not too hard you want them to be full like a tube and not flat. Repeat with remaining crepes.
Dust with powered sugar, then drizzle with chocolate sauce and chocolate chips.
Fill your crepes with your favorite filling… fruit, cream, caramel, spinach, bacon, chicken, ice cream or even cheese to serve. The possibilities are endless!
