Easy Key Lime Pie!!
2 egg whites
1/2 cup key lime juice
1 1/2 tsp. grated lime zest
1 can low-fat sweetened condensed milk
1 6 oz. graham cracker pie crust
1 1/2 cup low-fat whipped topping
Preheat oven to 350
Beat together the eggs and egg whites with a wire whip, or a mixer
until blended. Stir in the lime juice, zest, and sweetened condensed milk.
Beat until all well blended.
Pour into the pie crust. Bake in center of oven for about 20 minutes, or until the center is set but still wobbly. Allow pie to cool on the counter, then cover with plastic wrap and refrigerate for at least 2 hours before serving. Spread whipped topping evenly over the pie, and top with additional zest,
if so desired, just before serving.
Serves 8! Enjoy!!
