♥ Caprese Salad

1/2-1lb lb fresh mozzarella
1-2 whole fresh tomatoes cut in chunks or 1/2 container of grape tomatoes halved
6-8 large fresh basil leaves sliced in ribbons
1 cloved of garlic minced fine
1/4 cup EVO I prefer Colavita brand
Small package of baby Arugula
S&P to taste
In a measuring cup, add the EVO, garlic and S & P.
In medium bowl, chunk your mozzarella, add tomatoes and basil. Drizzle the EVO over the salad. Serve over a small amt of Arugula. Makes a great low carb lunch!
