Pear Muffins♥

Preheat oven to 400 degrees
Grease a muffin pan + 3 more in a 2nd pan (I use a baking spray, Canola)

Ingredients( 1st. bowl)

1 3/4 cup of whole wheat flour
4 tsp. of baking powder, leveled off
1/4 tsp. nutmeg
A pinch of salt
1 1/2 cups of Pear Pulp (roughly 6 nice size pears)

Mix all the dry ingredients in one bowl. Add in the pulp and coat it well with the flour

Ingredients (2nd bowl)

Add 1/2 cup of skim milk(1 or 2 % is fine)
Add 1/2 cup of Pear juice( that you juiced earlier)
2 egg whites
3 tbsp. of Canola oil
1/2-3/4 cup of honey

Mix all these wet ingredients in a 2nd bowl and blend it all together well.

Go ahead and stir the wet ingredients in bowl 2 into the dry ingredients in bowl 1. Hand mix but do not over mix.

Fill your muffin pans and Bake from 15-20 minutes or I remove them when a knife inserted into the center of the muffin, comes out clear and dry. Store them in a tight lid container.

I always add a bit of butter to give it that tiny taste of salt to sweet!! Enjoy them as much as we do!!
