Brown Sugar Fluff♥

4 egg whites
1 tsp. almond extract
1 c. brown sugar, unpacked
1/2 c. corn syrup
1/4 c. water

In large enough pot, put brown sugar, syrup and water on stove set to medium high heat. Stir just until it begins to bubble and boil. Then turn heat down to medium and leave alone for 10 minutes.

While you wait on pot to make syrup, add egg whites to your mixing bowl and allow to rest and come to room temp.

After 10 minutes of boiling syrup mixture, remove from heat and sit aside.

Begin beating egg whites until stiff peak is formed. Slowly add hot syrup mixture to egg whites and continue beating. This part is tricky because the beaters will want to sling the syrup to the side of bowl. Turn mixer off to add syrup to the center of egg whites and then turn back on. It is more of a process, but does work much better this way and the clean up will be easier as well.
