Breakfast Bacon Muffins

10-12 slices bacon
1 egg, beaten
3/4 c. milk
1 3/4 c. baking mix
1/4 c. sugar OR 1/8 c. sweetener
1 Tbsp. baking powder
1 c. shredded cheese
1/2 c. bran flakes, crushed
1/3 c. bacon drippings, from cooked bacon
1 can green chiles
Preheat oven 400°. Line muffin pan with baking cups. Spray cups with cooking spray to prevent sticking to them.
Cook bacon until crisp. Let bacon cool so you can break into pieces. Set pan off burner to allow drippings to cool.
Mix up egg, milk and bacon dripping in small bowl. Set aside.
Combine baking mix, sugar and baking powder in bowl. With spoon, create well in center of mixture. Pour milk mixture into center all at one time. Stir immediately to combine all ingredients together just until blended. Batter will be lumpy. Over mixing might cause tough muffins.
Fold in bacon, cheese, bran flakes and green chiles.
Fill muffins cups 3/4 full and bake 15 minutes or until golden.
Remove from pan and place on baking rack to cool.
