1 x tbsp olive oil
1 leek or onion
1 x tsp turmeric
300g paella rice
1 litre fish or chicken stock
200g frozen peas
2 x 180g jumbo king prawns
Defrost the Jumbo King Prawns then chop the Chorizo and Leek/Onion.
Heat the Oil in the Paella Pan, then throw in the Leek/Onion – stir for 5 minutes without letting them brown.
Add the Chorizo and fry until it releases its oils.
Stir in the Turmeric and Rice, coat them in the oils then pour in the Stock. Bring to the boil and simmer for 15 minutes, stirring occasionally.
Pour in the Peas and cook for 5 minutes, then stir in the Jumbo King Prawns to heat through for a final 1-2 minutes cooking or until rice is cooked.
Taste for seasoning and serve immediately with lemon wedges.
