Mediterranean Stuffed Peppers♥

1 large Red and 1 large Yellow Pepper, halved and deseeded (leave stalks on)
1 packet of Worldwide Foods Lemon & Coriander Cous Cous
A handful of Black Olives, roughly chopped
50g Feta Cheese, crumbled
A handful of Cherry Tomatoes, quartered
2 tbsp shredded Basil
Salad to serve
Heat the oven to 200°C/180°C Fan/Gas Mark 6.
Pop the peppers on a plate and microwave on medium for 5 minutes, until almost soft, then place on a baking tray, cut-side up.
Meanwhile, place the cous cous in a bowl and prepare as pack instructions.
Stir the cous cous with a fork, to break it up, then mix in the olives, feta, tomatoes and basil.
Pile the cous cous stuffing into the pepper halves and bake for 10 minutes until golden brown, then serve with salad.
