Sushi Rice (cooked according to package, vinegar added and chilled)
Fish Cakes (imitation Crab)
Tempura Shrimp (cooked)
Thin Sliced Avocado
Cucumber (Julienned or thinly sliced lengthwise)
Soy Paper or Nori, if desired
Sesame Seeds, pickled ginger, wasabi (optional)
Place one piece of soy paper on your sushi mat. Spread a thin layer of sushi rice on top and pat down. Sprinkle rice with sesame seeds, optional. Now layer with the shrimp, avocado, cream cheese, fish cakes and cucumber. Do not stack ingredients but spread out a little overlapping slightly. Now roll tightly, slice and serve with pickled ginger and wasabi, optional.
Notes: Fish cakes are imitation crab sticks. I get them at an Asian Food store in Reno, NV (hence the name Reno Roll) and they are sweeter and tastier than the imitation crab sold in a supermarket but can easily be interchangeable. I buy pre-made tempura shrimp and cook it according to the package instructions.
