Banana Cupcakes w/ Cream Cheese Frosting♥

1/2 cup Banana, ripe
2 Eggs
1/4 cup Butter
1 cup All-purpose flour
1/2 tsp Baking soda
1/4 cup Sour cream ( I used Greek Yogurt)
1/2 tsp Nutmeg, ground
1/4 tsp Salt
3/4 cup Sugar
1 tsp Vanilla
3 tbsp Walnuts (optional)
4 oz Cream cheese
1/2 tsp vanilla
1 3/4 cups Confectioners’ sugar
In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
Beat in banana and vanilla. Combine the flour, baking soda, nutmeg and salt; gradually add to creamed mixture alternately with sour cream, mixing well after each addition.
Fill paper-lined muffin cups half full. Bake at 350° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
For frosting, in a small bowl, beat cream cheese and vanilla until smooth. Gradually beat in confectioners’ sugar. Frost cupcakes; sprinkle with walnuts. Store in the refrigerator.
Yield: 1 dozen.
