♥ Coconut Curry Vegetable Soup

Summer and soup don’t seem like they go together real well…but this one is an exception and it’s pretty good cold too! I like to make a quick batch at night and then eat it throughout the next day. Its filling and delicious! Although this is vegetarian of course you can add diced chicken if you like!

You can use any veggies in your fridge, but I used:
1 med onion
2c carrots
2c celery
1c tomatoes diced
1c zucchini
2c kale shredded
2c mushrooms
Package of shirataki noodles
1/4c red quinoa
1c coconut milk unsweetened
4c veggie or chicken broth
2T thai curry paste
1t curry powder
1T soy sauce
1T minced garlic

Heat oil over med high, saute onions til translucent. Add celery and stir. When slightly tender add garlic. When fragrant add diced carrots. Add tomatoes when carrots are tender. Heat until tomatoes start to break down a bit. Add broth, coconut milk, curry and paste, soy sauce and remaining veggies. Heat over med heat to a boil. Add quinoa and simmer 15-20 min. Tada! Soup for the week…or quick meals for the next day!
