Potatoes are rich in vitamin C and fibre and broccoli is a powerhouse of nutrients.
Time Less than 1 hour
Recipe Type: Light meals
Main Ingredient: Vegetables
4 large PnP potatoes, scrubbed well
1.5 cups PnP head broccoli, finely chopped
1 half PnP onion, finely chopped
0.5 cup PnP cheddar cheese, grated
1 dash salt and black pepper, to taste
Preheat oven to 180⁰C.
Cook potatoes in boiling water until cooked through, then drain and set aside.
Slice a lid lengthways off the potatoes and carefully scoop out the soft centre, making a boat.
Add a little salt and pepper and mash potato well.
Boil water and cook broccoli until half cooked, then drain and stir broccoli, onion and cheese through the mashed potato.
Spon mixture into potato boats and bake for 25-30 minutes or until cooked through.
Serve with gem squash.
