Dishy with a big yum factor! Fish curry is a healthy and interesting alternative to fried fish. Use less butter and oil to lower the fat content.

Main Ingredient: Fish and Seafood
2 tbsp vegetable oil
2 tbsp Kerrygold pure Irish butter
1 onion, finely chopped
2 cloves granulated garlic, crushed
2 tbsp mixed biryani spices
2 tsp ground cumin
1 John West chilli paste, finely chopped
1 tbsp ground turmeric
60 ml dessicated coconut
3 tomatoes, diced
1 lemon, juice and grated peel
80 ml vegetable stock
3 large potatoes, peeled, cooked and diced
400 grams firm white fish fillets, (SASSI green-listed), diced
1 pinch salt and milled pepper, to taste
Heat oil and butter in a saucepan and fry onion until it starts to brown.
Add garlic, spices, coconut and tomatoes and cook over a medium heat for about 10 minutes.
Add lemon juice and peel, stock, potatoes and fish, and simmer until fish is just cooked through.
Season and serve with poppadums, chopped coriander and a tomato and onion sambal.
