Chickpea and fat-free feta salad

♥ Chickpea and fat-free feta salad

3 cans chickpeas, rinsed and drained
6 stalks celery, chopped
3 carrots, peeled into ribbons
3 heads cos lettuce, roughly torn
80 ml basil, or flat-leaf parsley leaves
1 zest of lemon
50 grams pecan nuts, toasted
200 grams fat-free feta cheese
30 ml water
60 ml white balsamic vinegar
1 squeeze lemon juice
15 ml grain mustard
30 ml olive oil
1 garlic clove, crushed
1 grinding milled black pepper, to taste

Arrange all salad ingredients on a serving platter.
Whisk together vinaigrette ingredients, drizzle a little over salad and serve.
Good idea

Store leftover dressing in a jar in the fridge.
