Cabbage-wrapped pork meatballs

A trusty crowd-pleaser, with a bit of a twist.
Time Less than 1.5 hours
Serves: 4
Recipe Type: Mains
Main Ingredient: Pork

400 grams pork mince
1 onion, finely chopped
1 clove garlic , grated
2 cups rice, overcooked , mushy
1 pinch salt and milled pepper
8 leaves cabbage
250 ml water
30 ml vegetable oil

Preheat oven to 180°C.
Combine mince, grated butternut, onion, garlic and rice. Season well.
Divide mixture into 8 and shape into longish meatballs.
Wrap each meatball in a cabbage leaf and place in a roasting dish small enough to fit the cabbage parcels snugly.
Add water, cover with foil and roast for 25-30 minutes.
Toss butternut chunks in oil, season with salt and pepper and place on small roasting tray. Roast for 35 minutes. (Save half the roasted butternut chunks to make butternut mash).
Serve drizzled with pan juices.
